More about Tea
Certified Organic Matcha & Japanese Tea from Kyoto, Kagoshima & Fukuoka
EdoMatcha sells JAS-certified organic matcha and loose-leaf Japanese tea, grown in three of Japan's best-known tea regions: Kyoto, Kagoshima and Fukuoka.
Our teas are grown without synthetic pesticides or chemical fertilisers and certified under the Japanese Agricultural Standard (JAS), Japan's organic standard. Only around 5% of Japanese tea production reaches it.
Clean farming. Pure flavour. True Japanese craftsmanship.
Why Choose EdoMatcha?
- JAS certified organic, every tea we sell
- Direct from Japanese tea farms we have visited ourselves
- Curated by a Certified Japanese Tea Instructor (NPO Nihoncha Instructor Association)
- Shipped fresh, Australia-wide and worldwide
Because matcha is drunk as whole-leaf powder rather than steeped and strained, purity matters more than it does for any other tea. That is why we only source certified organic tea.
Types of Japanese Tea
All true tea comes from one plant, Camellia sinensis. What makes each Japanese tea different is how it is grown, shaded, steamed, roasted or oxidised.
Sencha (煎茶): Japan's most popular everyday green tea. Steamed and rolled leaves give a balance of sweetness, gentle bitterness and umami.
Matcha (抹茶): shade-grown tencha leaves, de-veined and stone-ground into a fine green powder. Whisked in a bowl for tea ceremony, or used in lattes and baking.
Gyokuro (玉露): a premium shade-grown tea. Shading in the weeks before harvest builds deep umami, sweetness and a vivid green colour.
Hojicha (ほうじ茶): roasted green tea with nutty, caramel-like notes and naturally low caffeine. We also sell a hojicha powder for lattes, made for us by our partner tea company in Ujitawara, Kyoto, from organic tea grown in Japan.
Genmaicha (玄米茶): green tea blended with roasted brown rice for a toasty, savoury aroma.
Japanese black tea (和紅茶): the same tea plant, fully oxidised. Smooth and gently sweet, with none of the astringency of many Western black teas.
